Recipe of the day - Oven Empenadas


My MIL makes these and they are amazing! This is not her recipe, that is a closely guarded secret! LOL These are the ones I've made, and they come out pretty good. I have also used pre-made packaged pie crusts instead of making the dough and that works fine too.

DOUGH:

4-5 c. flour
3/4-1 c. shortening
3/4 c. cold milk with 2 tsp. salt added
2 egg yolks

FILLING:

1 lb. hamburger, browned
1 med. onion, chopped and cooked
3-4 hard boiled eggs, chopped
Raisins and olives, chopped

Add egg yolks to milk and stir until well mixed. Cut shortening into flour and add all ingredients together.
Do not knead. Let rest overnight in refrigerator. Next day shape dough into balls and roll out into "empanadas" 6 inch in diameter.

Fill the empanadas with hamburger, cooked onions, hard boiled eggs, black olives and raisins. Close dough and pinch down before brushing. Brush them with milk and egg white mixture. Bake on greased cookie sheet at 400 degrees until golden.

Notes: You can also use pretty much any ground meat for a filling, or add some cooked rice to the mix. I have also done taco-style empenadas and used taco seasoning on the meat and put shredded cheese inside. The options are endless!
