I discovered that the Price Chopper website has a really great recipes section and found this one and thought it looked muy, muy delicioso! :) Original recipe for Rachael's Huevos Rancheros Tostadas here.
Yield: Makes 4 BIG servings
Ingredients:
8 oz. chorizo sausage, casing removed (located near packaged kielbasa in market)
1 drizzle extra virgin olive oil
1/2 small cooking onion, minced
1 clove garlic, chopped fine
1 can (14 oz.) diced tomatoes in juice
1 can (4.5 oz.) green diced chili peppers, drained well
A few Cilantro leaves, chopped very well (optional)
2 pinches dried oregano
Salt, to taste
Pepper, to taste
4 tortillas
8 oz. cheddar or Monterey Jack cheese, shredded
2 pats butter
4 large cage free eggs
Salt, to taste
Directions:
Cook chopped chorizo in a small pan over medium high heat to heat through. Set aside.
Add a drizzle of oil and cook onion and garlic 2 or 3 minutes. Add tomatoes and chilies, cilantro, oregano, salt and pepper. Heat through and reduce heat to low.
Heat a griddle pan over medium to medium high heat. Place a tortilla on griddle. Heat 30 seconds on the first side, then flip and top one half of tortilla with cheese and a handful of browned sausage then fold each tortilla in half.
Flip stuffed tortillas and heat reverse side a minute more. Transfer to a serving plate and repeat process with remaining tortillas and fillings.
Return small skillet that you cooked sausage in to stove over medium heat. Add half a pat of butter and fry one egg at a time, breaking yolk to hard fry. Season with a touch of salt. Top each stuffed tostada with a fried egg and tomato chili sauce.
That sounds like an amazing breakfast/lunch/dinner to me!!
